Description

This luscious Peanut Butter Lasagna dessert features layers of crushed chocolate sandwich cookies, creamy peanut butter filling, whipped topping, chocolate fudge pudding, and chopped peanut butter cups, resulting in a rich, no-bake treat that’s perfect for any occasion.

Ingredients

Cookie Crust

  • 20 chocolate cream-filled chocolate sandwich cookies, divided
  • 2 tablespoons butter, softened

Peanut Butter Layer

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup peanut butter
  • 1 cup confectioners’ sugar, divided
  • 1/2 carton (8 ounces) frozen whipped topping, thawed
  • 15 miniature peanut butter cups, chopped

Chocolate Pudding Layer

  • 1 cup 2% milk
  • 1 package (3.9 ounces) instant chocolate fudge pudding mix
  • 1/2 cup confectioners’ sugar
  • 1/2 carton (8 ounces) frozen whipped topping, thawed

Topping

  • 4 chocolate cream-filled chocolate sandwich cookies, crushed

Instructions

  1. Make the cookie crust: Crush 16 of the chocolate sandwich cookies and combine them with the softened butter. Press this mixture evenly into the bottom of an ungreased 9-inch square dish to create the crust. Set aside.
  2. Add the peanut butter layer: In a large bowl or stand mixer, beat the softened cream cheese, peanut butter, and 1 cup of confectioners’ sugar until smooth and creamy. Gently fold in half (8 ounces) of the thawed whipped topping. Spread this peanut butter mixture evenly over the cookie crust. Sprinkle the chopped miniature peanut butter cups evenly over the top.
  3. Add the chocolate pudding layer: In another large bowl or clean stand mixer bowl, beat together the 2% milk, instant chocolate fudge pudding mix, and remaining 1/2 cup of confectioners’ sugar on low speed for two minutes. Let the mixture stand for an additional two minutes to set slightly. Fold in the remaining half (8 ounces) of the whipped topping. Spread this creamy chocolate pudding layer evenly over the peanut butter cups layer.
  4. Add the topping and chill: Crush the remaining 4 chocolate sandwich cookies and sprinkle them over the top of the dessert. Cover the dish and refrigerate for at least three hours to let the layers set and flavors meld before serving.
