Description

This flavorful grilled portobello mushroom burger recipe features marinated mushrooms grilled to perfection and topped with melted reduced-fat Swiss cheese, fresh vegetables, and served on whole wheat low-calorie buns. It’s a satisfying and healthy alternative to traditional beef burgers, perfect for a delicious vegetarian meal.

Ingredients

Marinade and Mushrooms

  • 4 portobello mushroom caps
  • 2 tbsp balsamic vinegar
  • 1 tbsp low sodium soy sauce
  • 1 tbsp olive oil
  • 1 tbsp chopped rosemary
  • 1½ tsp steak seasoning like Montreal Steak Grill Mates

Additional Toppings

  • 4 thick slices red onion
  • 4 oz reduced fat Swiss cheese, sliced thin
  • 4 thin slices tomato
  • ½ avocado, sliced thin
  • Baby spinach
  • 4 whole wheat low calorie buns (e.g., Martin brand)

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together the balsamic vinegar, low sodium soy sauce, olive oil, chopped rosemary, and Montreal steak seasoning until fully combined to create a flavorful marinade.
  2. Marinate the Mushrooms: Add the portobello mushroom caps to the marinade bowl and toss with a spoon to coat each mushroom evenly. Let them stand at room temperature for 20 to 30 minutes, turning a few times to absorb the flavors.
  3. Preheat the Grill: Heat your outdoor grill or an indoor grill pan over medium heat. Once hot, brush the grill grate with oil or lightly spray the grill pan to prevent sticking.
  4. Grill the Mushrooms: Place the marinated mushrooms on the grill, reserving the leftover marinade for basting. Grill the mushrooms for 5 to 7 minutes per side, frequently brushing them with the reserved marinade until they become tender.
  5. Add the Cheese: During the last minute of grilling, place the thin slices of reduced fat Swiss cheese on top of the mushrooms, allowing it to melt slightly.
  6. Grill Onions and Buns: While the mushrooms cook, grill the red onion slices for about 1 minute on each side until slightly charred and tender. Also, grill the whole wheat buns until lightly toasted.
  7. Assemble the Burgers: To assemble, layer baby spinach on the bottom bun, add the grilled portobello mushroom topped with melted Swiss cheese, then the grilled onion slices, sliced tomato, and thinly sliced avocado. Cover with the top bun and serve immediately.

Notes

  • Use low sodium soy sauce to keep the sodium content moderate.
  • Feel free to substitute the steak seasoning with your favorite herb or spice blend.
  • For a vegan option, omit the cheese or use a plant-based cheese alternative.
  • Make sure to baste the mushrooms frequently to keep them moist and flavorful.
  • Grilling the buns lightly adds a nice texture and enhances flavor.
