- Prepare the aromatics: Heat a large cast iron pan over medium heat. Add the unsalted butter and allow it to melt completely. Once melted, add the finely diced green bell pepper and onion. Cook, stirring occasionally, until the vegetables soften and become fragrant, about 7-8 minutes.
- Cook the potatoes and corned beef: Add the par-cooked chopped potatoes and chopped cooked corned beef to the pan. Spread the mixture evenly so that it makes good contact with the pan surface. Allow it to cook undisturbed for about 5 minutes so that the hash browns and crisps on the bottom. Then flip the mixture and continue cooking until the other side also browns nicely.
- Season and finish: Season the hash with salt and freshly ground black pepper to taste. Add the minced green onions, if using, and mix thoroughly. Remove the pan from the heat. Serve the corned beef hash hot, ideally accompanied by poached or fried eggs for a complete meal. Enjoy!
