Description

This Best Chipotle Chicken Avocado Melt is a quick and flavorful sandwich perfect for a satisfying lunch or easy dinner. Combining creamy avocado, smoky chicken breast, spicy chipotle sauce, and melted creamy cheese on toasted sourdough bread, it offers a balanced blend of smoky, spicy, and fresh flavors. Ready in just 10 minutes, this melt is an easy stovetop recipe you’ll want to make again and again.

Ingredients

Chipotle Sauce

  • 1 tablespoon chipotle adobo sauce
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • 1/4 teaspoon coarse salt

Sandwich

  • 1 tablespoon olive oil
  • 2 slices sourdough bread
  • 1/4 avocado (sliced)
  • 2 ounces smoked chicken breast (sliced)
  • 3 Peppadew peppers (sliced)
  • 1 tablespoon fresh chopped cilantro
  • 1 slice Chao creamy original cheese
  • 1 – 2 tablespoons chipotle sauce (prepared above, for spreading inside bread)

Instructions

  1. Make the chipotle sauce. In a small bowl, combine chipotle adobo sauce, mayonnaise, lemon juice, minced garlic, and coarse salt. Stir well until smooth and evenly mixed. Adjust seasoning to taste if necessary, then set the sauce aside.
  2. Prepare the skillet and bread. Heat a large skillet over medium-high heat. Brush olive oil onto the outer sides of both slices of sourdough bread to ensure a golden, crispy toast.
  3. Assemble the sandwich in the skillet. Place one slice of the bread, oiled side down, onto the skillet. Layer the slice of Chao creamy original cheese on top, followed by the smoked chicken breast slices, sliced Peppadew peppers, avocado slices, and fresh chopped cilantro. Spread 1 to 2 tablespoons of the prepared chipotle sauce on the inside side of the second bread slice before placing it, sauce side down, on top of the sandwich.
  4. Cook until golden and cheese melts. Allow the sandwich to cook until the bottom bread is golden brown and the cheese starts to melt, monitoring closely to avoid burning.
  5. Flip and toast the other side. Carefully turn the sandwich over to toast the other side until golden brown and the cheese is fully melted.
  6. Serve. Remove the sandwich from the skillet. Slice it in half and serve immediately while warm and melty.

Notes

  • You can substitute smoked chicken breast with grilled or rotisserie chicken if preferred.
  • Adjust the chipotle sauce amount according to your desired spice level.
  • Peppadew peppers add a sweet heat — if unavailable, consider using mild pickled peppers or jalapeños.
  • For a dairy-free option, the Chao creamy original is a plant-based cheese alternative.
  • To make the sandwich gluten-free, use gluten-free bread.
