Ingredients

Cheese Sauce

  • 1 cup leftover gravy
  • 1/2 cup milk
  • Pinch of nutmeg
  • 2 cups shredded Gruyère cheese, divided

Sandwich

  • 4 croissants, halved
  • 4 tablespoons Dijon mustard
  • 1 cup leftover mashed potatoes
  • 1 cup leftover turkey
  • 1 cup leftover cranberry sauce
  • 1/2 cup leftover vegetables
  • 48 slices crispy bacon

For Serving

  • 4 fried eggs
  • Crispy sage leaves


Instructions

  1. Make the cheese sauce: In a small pot, combine the leftover gravy and milk. Bring to a gentle boil over medium heat. Add a pinch of nutmeg for warmth and aroma. Remove from heat and stir in 1 cup of shredded Gruyère cheese and the grated Parmesan until fully melted and smooth.
  2. Prepare for baking: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Arrange the bottom halves of the croissants evenly on the sheet.
  3. Assemble the sandwiches: Spread 1 tablespoon of Dijon mustard on each bottom croissant half. Layer a generous spoonful of mashed potatoes over the mustard. Drizzle some of the cheese sauce on top of the potatoes, then add turkey, cranberry sauce, leftover vegetables, and crispy bacon slices. Top with the croissant halves.
