  • 1 large head iceberg or butter lettuce

Main Ingredients

  • 3 tablespoons vegetable oil
  • 1 large red onion, chopped
  • 2 tablespoons finely chopped fresh ginger (from a thick 2-inch piece)
  • 3 cloves garlic, minced
  • 2 pounds ground chicken (not all breast meat)
  • 1½ tablespoons soy sauce (use gluten-free if needed)
  • 3 tablespoons fish sauce
  • ¼ cup light or dark brown sugar
  • 2 teaspoons lime zest, from 2 limes
  • 3 tablespoons freshly squeezed lime juice, from 1½ limes
  • ½ teaspoon red pepper flakes
  • 2 large scallions, white and green parts, finely sliced
  • ½ cup chopped fresh cilantro
  • ¼ cup chopped fresh mint
  • ¼ cup chopped cashews or peanuts

Optional Garnishes & Serving

  • Sriracha
  • Finely sliced carrots
  • Lime wedges
  • Cilantro and/or mint sprigs


Instructions

  1. Prepare the lettuce: If using iceberg lettuce, fill a large bowl with cold water. Cut off the stem and remove the inner core by cutting around it without slicing all the way through. Discard the outer leaves, place the head in water, gently pull leaves apart, and dry on paper towels. Cut large leaves in half and chill until serving. If using butter lettuce, simply separate the leaves and refrigerate.
  2. Sauté aromatics: Heat vegetable oil in a large sauté pan over medium heat. Add chopped onion and finely chopped ginger, cooking and stirring frequently until softened, about 4-5 minutes. Add minced garlic and cook for 1 more minute.
  3. Cook the chicken: Increase heat to high and add ground chicken to the pan. Break up the meat with a wooden spoon and cook until partially done, about 3 minutes.
  4. Season and finish cooking: Stir in soy sauce, fish sauce, brown sugar, lime zest, lime juice, and red pepper flakes. Continue cooking and stirring frequently until chicken is fully cooked through, about 5-6 more minutes.
  5. Add herbs and nuts: Remove from heat and stir in sliced scallions, chopped cilantro, chopped mint, and chopped cashews or peanuts. Taste and adjust seasoning if needed.
  6. Assemble and serve: Spoon the seasoned chicken mixture into chilled lettuce cups. Serve with optional garnishes such as Sriracha, finely sliced carrots, lime wedges, and sprigs of cilantro or mint.
  7. Freezer tip: Freeze the cooked meat mixture in an airtight container for up to 3 months. Reheat in the microwave or on the stovetop until hot before serving.
