Marinade and Sauce
- 150 g Smooth peanut butter
- 100 g Thai red curry paste
- 2 tbsp Soy sauce
- 400 ml Coconut milk (divided: 50 ml for marinade, 350 ml for sauce)

Instructions
- Prepare Marinade: In a large bowl, combine peanut butter, Thai red curry paste, soy sauce, and 50 ml of coconut milk. Beat together until smooth to form the marinade.
- Make Satay Sauce: Transfer two thirds of the marinade into a saucepan, add the remaining 350 ml coconut milk, and mix well. Set aside and keep warm for serving.
- Marinate Chicken: Add the bite-sized chicken pieces to the remaining marinade in the bowl. Toss until the chicken is completely coated with the marinade for maximum flavor infusion.
- Skewer Chicken: Thread the marinated chicken pieces onto 4 skewers, ensuring even distribution for consistent cooking.
