Description

Tex-Mex Stuffed Peppers are a flavorful and satisfying weeknight dinner featuring bell peppers filled with a hearty mixture of seasoned ground beef, rice, beans, corn, and salsa, topped with enchilada sauce and melted cheddar cheese. This recipe offers a perfect blend of Southwest-inspired spices and wholesome ingredients, making it an easy, crowd-pleasing dish that tastes even better the next day.

Ingredients

Meat and Seasoning

  • 1 pound lean ground beef
  • 3 tablespoons taco seasoning, or one packet + 1 teaspoon chili powder and 1 teaspoon cumin

Vegetables and Grains

  • 1 cup cooked rice
  • 1 cup salsa
  • 1 cup corn
  • 1 cup black beans
  • 4 bell peppers (split in half and de-seeded through the stem)

Sauces and Cheese

  • 1 cup enchilada sauce
  • 8 ounces shredded cheddar cheese, divided

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) to prepare for baking the stuffed peppers.
  2. Brown the Ground Beef: In a large cast iron skillet, add the ground beef. Cook it over medium-high heat until a deep brown crust forms, about 5-6 minutes, breaking it apart as it cooks.
  3. Mix the Filling: Stir in taco seasoning, cooked rice, salsa, corn, and black beans into the browned beef until evenly combined.
  4. Stuff the Peppers: Fill each bell pepper half with the meat and rice mixture. Arrange them in a covered baking dish.
  5. Add Sauce and Cheese: Pour enchilada sauce over each stuffed pepper and sprinkle half of the shredded cheddar cheese on top.
  6. Bake Covered: Cover the baking dish and bake the peppers for 45 minutes, allowing the flavors to meld and the peppers to soften.
  7. Melt Remaining Cheese: Remove the cover, sprinkle the remaining cheese on top, and bake uncovered for an additional 5 minutes until the cheese melts and bubbles.

Notes

  • You can customize the heat level by adjusting the amount or type of taco seasoning used.
  • For a vegetarian version, substitute ground beef with plant-based meat or extra beans.
  • Leftovers store well and can be reheated for a flavorful next-day meal.
  • If preferred, precook the bell peppers slightly to reduce overall baking time.
  • Use a cast iron skillet or any heavy pan for best browning results on the beef.
