Ingredients

Noodles and Sauce

  • 16 oz. thin spaghetti noodles (whole grain recommended)
  • 1 cup Teriyaki Sauce (homemade or store-bought)

Vegetables and Garnish

  • 1 cup snow peas (tips removed, sliced on the diagonal)
  • 1 bunch green onions (sliced on the diagonal)
  • 2 carrots (shredded)
  • 1 tbsp sesame seeds
  • 1/2 cup cilantro (loosely chopped)


Instructions

  1. Boil Noodles: Put a large pot of water on to boil. When it reaches a rolling boil, cook the thin spaghetti noodles according to package instructions until al dente.
  2. Prepare Vegetables: While the water is boiling and noodles are cooking, slice the snow peas and green onions on the diagonal, shred the carrots, and loosely chop the cilantro.
  3. Mix Sauce: Measure out one cup of teriyaki sauce, setting aside the remaining sauce for another use.
  4. Drain and Rinse Noodles: Drain the cooked noodles and rinse them under cold water to stop the cooking process and cool them down.
  5. Combine Ingredients: Add the prepared vegetables to the noodles, reserving a small amount of green onions and cilantro for garnish.
  6. Toss with Sauce: Pour the cup of teriyaki sauce over the noodle and vegetable mixture and toss to evenly coat.
  7. Garnish and Serve: Garnish with the reserved green onions, cilantro, and sprinkle sesame seeds on top before serving.
