Ingredients
Beef and Vegetables
- 1 pound Extra Lean Ground Beef
- 2 Zucchini, chopped
- 6 oz Sliced Mushrooms (blend of shiitake, oyster, and baby bella)
- 1 Tablespoon Olive Oil, divided
Sauce and Condiments
- 2/3 cup (169g) Teriyaki Sauce (Kevin’s brand recommended)
- 1/4 cup (60g) Light Mayo
- 1 1/2 Tablespoons (23g) Sriracha
- 1 Tablespoon (21g) Honey
- 1 Tablespoon (15g) Rice Vinegar
- 1/2 teaspoon Garlic Powder
Serving
- 3 cups (340g) Cooked Cauliflower Rice
- 2 cups (280g) Cooked Rice
Instructions
- Brown the Ground Beef: Heat 1/2 tablespoon of olive oil in a large skillet over medium-high heat. Add the extra lean ground beef, breaking it apart with a spatula. Cook until fully browned and no longer pink, then push the cooked beef to one side of the skillet.
- Sauté the Zucchini: Add the remaining 1/2 tablespoon of olive oil to the empty side of the skillet. Add the chopped zucchini and cook for about 3 minutes until it begins to soften and pick up some color.
- Add Mushrooms and Sauce: Stir in the sliced mushrooms, mixing all the vegetables and beef together. Pour in the teriyaki sauce and stir well to coat evenly. Continue cooking for 1-2 minutes until the sauce thickens slightly and clings to the stir fry.
- Serve: Spoon the teriyaki ground beef and vegetable mixture over cooked rice or cauliflower rice. Optionally, garnish with chopped scallions and sesame seeds for added flavor and texture.
Notes
- Use extra lean ground beef to keep the dish lower in fat.
- Feel free to swap in any mushroom varieties you prefer or have on hand.
- For a spicier dish, adjust the amount of sriracha to taste.
- This stir fry is great over cauliflower rice for a low-carb option.
- Garnishing with scallions and sesame seeds adds freshness and a nutty crunch.
