Description

This easy Teriyaki Chicken Bake features tender, juicy chicken breasts baked in a homemade sweet and savory teriyaki sauce, accompanied by colorful vegetables. Perfect for a quick weeknight dinner, it pairs wonderfully with steamed rice and your favorite veggies for a balanced, delicious meal.

Ingredients

Teriyaki Sauce

  • 3/4 cup soy sauce
  • 4 tbsp honey
  • 1 tbsp garlic (minced)
  • 3 tbsp water
  • 1 tbsp cornstarch

Main

  • 1 lb chicken breast (boneless, skinless)
  • 2 cups mixed vegetables (bell pepper, broccoli, green beans, etc.)
  • Salt & Pepper (to taste)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken and vegetables.
  2. Make Teriyaki Sauce: In a medium saucepan, whisk together the soy sauce, honey, and minced garlic until combined.
  3. Thicken Sauce: In a small bowl, mix the water and cornstarch until smooth. Add this mixture to the saucepan and cook over medium heat, stirring frequently until the sauce bubbles and thickens. Remove from heat.
  4. Prepare Vegetables: Slice and chop your chosen vegetables into bite-sized pieces for even cooking.
  5. Arrange Ingredients: Line a baking sheet with parchment paper. Spoon a small amount of teriyaki sauce in the center of the parchment to prevent sticking, then place the chicken breast on top.
  6. Add Vegetables: Surround the chicken with the chopped vegetables on the baking sheet. Season everything with salt and pepper to taste.
  7. Drizzle Sauce: Pour the remaining thickened teriyaki sauce evenly over the chicken and vegetables to ensure full flavor.
  8. Bake: Place the baking sheet in the oven and bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  9. Serve: Slice the cooked chicken and serve warm alongside the vegetables. Optionally, serve over cooked rice for a complete meal.
