Instructions
- Warm the oven: Preheat your oven to 350°F (175°C). Lightly coat a 13- x 9-inch baking dish with cooking spray to prevent sticking.
- Season the onions: In a large bowl, place the sliced onion rings. Sprinkle the dried thyme, parsley flakes, garlic salt, dried oregano, dry mustard, and cayenne pepper over the onions. Toss gently to evenly coat all the onion rings with the seasoning mix.
- Add to baking dish: Arrange the seasoned onion rings evenly in the prepared baking dish, spreading them out to form a uniform layer.
- Add toppings and bake: Distribute the salted butter pieces evenly over the onions. Sprinkle the shredded mild Cheddar and smoked Gouda cheeses evenly on top. Cover the dish tightly with aluminum foil to keep moisture in and bake in the preheated oven until the onions are soft and the sides of the casserole are bubbly, about 40 minutes.
- Finish baking: Carefully remove the foil and continue baking uncovered at 350°F for about 30 minutes more, or until the top is beautifully golden and slightly crispy.
