Ingredients
Salad
- 1 bunch Swiss chard, about 12 ounces
- ¾ cups (1.5 – 2 ounces) grated Parmesan, Grana Padano or Pecorino
- sea salt to taste
- crushed red pepper flakes, optional
Dressing
- 1 lemon (zested and juiced)
- ½ cup extra virgin olive oil, divided (¼ cup for dressing, ¼ cup for toasting bread crumbs)
- a few generous pinches of salt
Bread Crumbs
- 1½ cups (2.5 ounces) fresh bread crumbs
- 1 clove garlic, minced
Instructions
- Prepare the chard: Wash and dry the Swiss chard thoroughly. Remove the stems from the leaves—reserve the stems for another use if desired. Stack several leaves on top of each other, roll them tightly like a cigar, then slice into thin 1/8-inch ribbons. Continue until all leaves are shredded. Transfer the shredded chard to a large salad bowl.
- Make toasted bread crumbs: Heat ¼ cup of olive oil in a small, heavy skillet over medium heat. Add the fresh bread crumbs and stir frequently to toast them until crisp and golden brown, about 5 minutes—take care not to burn them. Stir in the minced garlic, a pinch of salt, and the crushed red pepper flakes if using. Toast for another minute, then remove from heat.
- Prepare the lemon dressing: Zest the lemon directly into the bowl containing the shredded chard. Juice the lemon into a separate small bowl. Add a few generous pinches of salt, then slowly whisk in ¼ cup of olive oil to create a bright, tangy dressing.
- Toss the salad: Add the grated Parmesan and approximately two-thirds of the lemon dressing to the chard. Toss thoroughly to evenly coat the greens. Taste and adjust with more dressing if preferred.
- Serve: Sprinkle the toasted garlic bread crumbs over the dressed salad. Toss lightly once more and serve immediately to enjoy the crisp textures and vibrant flavors at their best.
Notes
- Save Swiss chard stems for use in soups, sautés, or stir-fries.
- For best texture, use fresh bread crumbs made from day-old bread.
- Adjust the amount of crushed red pepper flakes based on your heat preference or omit for a milder salad.
- Grana Padano or Pecorino can be substituted interchangeably with Parmesan for varied flavor.
