Ingredients
Mint Cream Cheese Mixture
- ¼ cup granulated sugar
- 1-1/2 cups picked mint leaves (45 grams), packed and patted dry
- 8 ounces cream cheese, room temperature
- 1 large egg, room temperature
- 1-1/2 tablespoons all-purpose flour
Brownie Mixture
- ½ cup unsalted butter
- 2 tablespoons vegetable oil
- 6 ounces dark chocolate (at least 60% cocoa)
- 3 large eggs, room temperature
- ⅓ cup light brown sugar
- ⅓ cup granulated sugar
- ½ cup plus 1 tablespoon all-purpose flour
- ⅓ cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- ⅛ teaspoon kosher salt
Instructions
- Make Mint Cream Cheese Mixture: Place the granulated sugar and fresh mint leaves in the bowl of a food processor and pulse until the mint is finely chopped. Add the cream cheese, one large egg, and the 1-1/2 tablespoons of flour to the processor, then pulse until the mixture is smooth. Set this mint cream cheese mixture aside.
- Prepare Brownie Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, and kosher salt and set aside.
- Melt Chocolate Mixture: In a heatproof bowl set over a pan of simmering water (double boiler), combine the dark chocolate, unsalted butter, vegetable oil, light brown sugar, and granulated sugar. Stir occasionally until everything is melted, smooth, and glossy, about 5 minutes, allowing the sugars to melt as well. Remove from heat and let cool slightly.
- Add Eggs and Flavorings: Whisk the vanilla extract into the cooled chocolate mixture. Then, add the three large eggs one at a time, whisking well after each addition to create a smooth batter.
- Combine Dry and Wet Ingredients: Fold the dry ingredients (flour, cocoa powder, salt) into the chocolate mixture gently until just combined to avoid overmixing.
- Assemble the Brownies: Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper. Pour approximately three-quarters of the brownie batter into the prepared pan and smooth into an even layer.
- Add Mint Swirl: Drop spoonfuls of the mint cream cheese mixture onto the brownie batter evenly.
- Layer Remaining Brownie Batter: Spoon the rest of the brownie batter over the mint cream cheese drops in the pan.
- Create Swirled Effect: Using a small spatula or table knife, gently swirl the two batters together to create a beautiful marbled pattern without fully mixing them.
- Bake: Bake the brownies for 30-40 minutes until a toothpick inserted in the center comes out with moist crumbs but no wet batter.
- Cool and Serve: Allow the brownies to cool completely in the pan before cutting into bars for serving.
Notes
- Room temperature eggs and cream cheese help ensure smooth mixtures and prevent curdling.
- Fresh mint leaves are critical for a bright and authentic mint flavor; be sure to pat them dry before processing.
- Do not overmix the swirl batters when combining to preserve the distinct marbled look.
- Check brownies starting at 30 minutes of baking to avoid overbaking; they should remain fudgy inside.
- Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
