Description

Sweet Potato Toast is a nutritious and versatile alternative to traditional bread toast, made by thinly slicing sweet potatoes and toasting them until tender. Ingredients

Sweet Potato Toast Base

  • 1 large wide sweet potato
  • Cooking spray
  • Salt (to taste)

Instructions

  1. Prepare the Sweet Potato: Using a large sharp knife, cut off the bottom stem of the sweet potato and place it cut side down on a cutting board, leaving the skin on.
  2. Slice the Sweet Potato: Carefully slice the sweet potato into about 6 thin pieces, each about 1/4″ to 1/3″ thick, cutting from one end to the other.
  3. Season the Slices: Lightly spray each sweet potato slice with cooking spray and sprinkle with salt to taste.
  4. Toast the Sweet Potatoes: Insert the seasoned slices into a toaster on a high setting, similar to bread. Alternatively, use a toaster oven to toast the slices.
  5. Check for Doneness: When the slices pop up, check if they are fork tender. If needed, toast them longer until they reach desired tenderness. If toasting multiple rounds, you may reduce the toaster setting to medium to prevent burning.
  6. Cool the Sweet Potato Toast: Remove the slices and place them on a wire rack to cool slightly before adding toppings.
  7. Oven Alternative: Preheat the oven to 350℉. Place a wire rack on a rimmed baking sheet, arrange the sweet potato slices on the rack, and bake for 15-20 minutes until fork tender but still firm. Cool on wire rack before topping.
  8. Add Toppings and Serve: Once the sweet potato toast base is cooled, add your preferred toppings such as cream cheese with blueberries, peanut butter with banana, or mashed avocado with lime juice. Serve immediately and enjoy.
