Ingredients

Pie Crust

  • 1 deep dish pie crust ($1.25)

Sweet Potato Filling

  • 2 lbs sweet potatoes ($0.98)
  • 6 Tbsp salted butter, melted & cooled ($0.80)
  • 1/2 cup brown sugar ($0.26)
  • 1/3 cup granulated sugar ($0.15)
  • 1 tsp vanilla extract ($0.59)
  • 1/2 tsp cinnamon ($0.06)
  • 1/4 tsp nutmeg ($0.05)
  • 1 pinch salt ($0.01)
  • 1/3 cup evaporated milk ($0.35)
  • 2 large eggs ($0.58)


Instructions

  1. Prepare and bake sweet potatoes: Preheat oven to 400°F. Wash and dry the sweet potatoes, prick several times with a fork. Place on a parchment-lined baking sheet and bake for 50-60 minutes or until tender, easily pierced with a knife or fork. Set aside to cool.
  2. Blind-bake the pie crust: Lower oven temperature to 350°F. Prick the bottom and sides of the pie crust with a fork. Line crust with parchment paper and place pie weights or dry beans on top. Bake for 15 minutes.
  3. Finish baking crust: Remove pie weights and parchment paper, return crust to oven and bake for an additional 10 minutes. Remove and let cool.
  4. Make the sweet potato filling: Scoop about 2 cups of the cooled sweet potato flesh into a large bowl. Mash or blend until smooth using a potato masher or hand mixer.
  5. Add flavorings and blend: Stir in melted butter, brown sugar, granulated sugar, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Blend with a hand mixer until smooth and well combined.
  6. Incorporate eggs and milk: Add eggs and evaporated milk to the sweet potato mixture. Continue blending until the filling is smooth and creamy.
  7. Fill and bake the pie: Pour the filling into the cooled pie crust. Wrap a foil ring around the edges to prevent over-browning. Bake at 350°F for 50-55 minutes or until the pie is mostly set and the center is no longer liquid but may have a slight jiggle.
  8. Cool and serve: Remove pie from oven; it will be slightly domed and puffed at edges. Let cool at room temperature for at least 1 hour before serving. Can be served at room temperature or refrigerated for later enjoyment.
