Description

This Sweet Potato Chicken Chili is a hearty and flavorful one-pot meal combining tender shredded chicken, sweet potatoes, black beans, and smoky spices simmered in a rich tomato base. It’s perfect for a cozy dinner and customizable with your favorite toppings like cheddar cheese, green onions, and tortilla chips.

Ingredients

Main Ingredients

  • 2 tablespoons olive oil
  • 1 sweet onion, diced
  • 1 bell pepper, diced
  • 4 garlic cloves, minced
  • Kosher salt and pepper, to taste
  • 2 (4 ounce) cans diced green chiles
  • 2 large sweet potatoes, peeled and chopped
  • 2 cups cooked, shredded chicken
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 28 ounces crushed fire roasted tomatoes
  • 2 (14 ounce) cans black beans, drained and rinsed
  • 4 to 6 cups chicken stock

Toppings

  • Grated cheddar cheese
  • Green onions
  • Chives
  • Sour cream
  • Fritos or tortilla chips
  • Cilantro

Instructions

  1. Heat and sauté vegetables: Heat the olive oil in a large stock pot over medium heat. Add the diced onions, bell pepper, and minced garlic along with a big pinch of kosher salt and pepper. Cook while stirring often until the vegetables soften, approximately 5 to 6 minutes.
  2. Add chiles, sweet potatoes, and chicken: Stir in the diced green chiles, chopped sweet potatoes, and shredded chicken. Sprinkle in the smoked paprika, chili powder, ground cumin, onion powder, and garlic powder. Stir thoroughly to coat all ingredients evenly and cook for an additional 3 to 4 minutes, stirring frequently to avoid sticking.
  3. Add liquids and simmer: Pour in the crushed fire roasted tomatoes and the black beans, then add 4 cups of chicken stock. Bring the mixture to a boil, then reduce the heat to a simmer. If necessary, add up to 2 more cups of chicken stock to cover the ingredients without making the chili too watery.
  4. Cook until tender: Cover the pot and let the chili simmer for 20 minutes, or until the sweet potatoes are tender when pierced with a fork. Taste and adjust seasoning with additional salt, pepper, or spices if needed.
  5. Serve with toppings: Ladle the chili into bowls and serve hot. Garnish with your favorite toppings such as grated cheddar cheese, green onions, chives, sour cream, fritos, tortilla chips, or fresh cilantro to enhance flavor and texture.

Notes

  • You can substitute cooked rotisserie chicken if short on time.
  • Adjust the amount of chicken stock to get your preferred chili thickness.
  • For a spicier version, add diced jalapeños or cayenne pepper to the seasoning mix.
  • This chili freezes well and can be reheated for an easy meal prep option.
  • Serve with cornbread or over rice for a heartier meal.
