Ingredients
Vegetables and Sausage
- 12-14 oz sweet potatoes, cubed (2-3 small/medium sweet potatoes)
- 1 red bell pepper, sliced into 1-2 inch strips
- 1 cup frozen corn
- 7-10 oz smoked sausage, sliced into coin-shapes
Seasonings and Oils
- 1-3 tsp extra virgin olive oil, more if needed

- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Eggs and Garnish
- 3 eggs
- 1 tbsp green onions, sliced (optional)
Instructions
- Prepare Ingredients: Cube the sweet potatoes into 1/2-inch pieces ensuring uniform size for even cooking. Slice the red bell pepper into long strips, then cut into 1-2 inch sections. Slice the smoked sausage into coin shapes.
- Cook Sausage: Heat olive oil in a cast iron or regular skillet over medium to medium-low heat. Once heated, add the sliced sausage and cook for 2-3 minutes, stirring occasionally until slightly browned. Remove sausage from skillet and set aside.
- Cook Sweet Potatoes: Add more olive oil to the skillet if it’s dry. Add the cubed sweet potatoes and cook for 9-11 minutes, stirring occasionally, until the potatoes are tender when pierced with a fork.
- Add Bell Peppers: Stir in the sliced bell peppers and cook for an additional 2 minutes to soften.
- Add Corn and Seasonings: Add the frozen corn to the skillet, stir, and cook for 1 minute. Season with salt, pepper, garlic powder, and onion powder to taste.
- Combine Sausage: Return the cooked sausage to the skillet, mix well, and cook for another minute. Remove the skillet from heat and portion the hash into three bowls.
- Cook Eggs: In the same skillet, add a little olive oil and pan fry the eggs to your liking (sunny side up, over easy, or well done).
- Assemble and Serve: Place one egg on top of each bowl of sweet potato hash. Garnish with sliced green onions if desired and serve immediately.
