Ingredients
Steak and Rubs
- 4 beef filet steaks (about 2 inches thick)
- 2 tablespoons Hey Grill Hey Beef Rub (or equal parts salt, pepper, and garlic powder)
- 2 tablespoons Hey Grill Hey Sweet Rub
- 2 tablespoons Hook’s Midnight Rub (or your favorite activated charcoal rub)
Sauce
- ½ cup Hey Grill Hey Everything BBQ Sauce (or your favorite BBQ sauce)
- ¼ cup dark brown sugar
- ¼ cup butter
Instructions
- Preheat the Smoker: Preheat your smoker to 225 degrees F to ensure a consistent low heat that will slowly cook the steak bites and infuse them with smoky flavor.
- Prepare the Steaks: Trim away any silverskin or large chunks of fat from the outside of the filet steaks. Cut the steaks into 1 1/2-inch cubes for uniform cooking.
- Season the Steak Bites: On a small plate, mix the Sweet Rub and Beef Rub together. Pour the Midnight Rub onto a second plate. Dip each steak bite top and bottom into the Midnight Rub, then roll the sides in the Sweet Rub mixture. Place the seasoned bites on a flat cooling rack evenly spaced.
- Smoke the Steak Bites: Place the cooling rack with the seasoned steak bites on the smoker grates. Close the smoker lid and smoke for about 1 hour, or until the internal temperature reaches 120 degrees F for medium-rare.
- Prepare the Sauce: Transfer the smoked steak bites to a cast iron skillet or aluminum pan. Drizzle with the BBQ sauce, evenly sprinkle the brown sugar over the top, and dot with pats of butter to add richness and sweetness.
- Smoke Again to Finish: Return the skillet to the smoker and continue cooking with the lid closed until the internal temperature reaches 130 degrees F (medium), the butter has melted, and the sauce has thickened to a sticky glaze around the steak bites. Serve warm for best flavor and texture.
