Sushi Cubes are an innovative and visually appealing way to enjoy sushi flavors in bite-sized portions. Featuring layers of sushi rice, fresh seafood, avocado, cream cheese, and seasonings, these bite-sized cubes are prepared in an ice cube tray and chilled to set, perfect for a fun appetizer or party snack.
Ingredients
Sushi Rice
- 1 cup sushi rice
- 1 tablespoon rice vinegar
- 1 teaspoon sesame seeds
- Salt, to taste
Fillings
- 1/2 an avocado, peeled and sliced thinly
- 4 pieces imitation crab, cut into bite-sized pieces
- 1 slice smoked salmon, cut into pieces
- 2 tablespoons cream cheese (spreadable)
- 4 pieces sushi-grade tuna, cut into pieces
- 4 cooked shrimp, peeled
- Chopped chives, a small handful
Condiments and Garnishes
- Mayonnaise, for garnish
- Soy sauce, for serving
Instructions
- Prepare the Rice: Cook the sushi rice in boiling salted water until tender. Drain well, then pour in the rice vinegar and sprinkle sesame seeds. Mix gently to incorporate. Cover an ice cube tray with plastic wrap to prepare for shaping the sushi cubes.
- Prepare the Fillings: Peel and thinly slice the avocado using a vegetable peeler. Cut the imitation crab, smoked salmon, and tuna into small pieces suitable for the cubes. Peel the shrimp if not already peeled. Chop the chives finely.
- Assemble the Sushi Cubes: In 8 compartments of the tray, place avocado slices and a piece of imitation crab. In the next 8 compartments, add pieces of smoked salmon and a small dollop of cream cheese. In the following 8 compartments, place chopped chives with pieces of tuna. In the last 8 compartments, put a shrimp along with a small amount of mayonnaise for flavor and garnish.
- Add the Rice and Chill: Fill each compartment completely with the prepared sushi rice, pressing gently to compact. Cover again and refrigerate the tray for 30 minutes to allow the cubes to set firmly.
- Serve: After chilling, unmould the sushi cubes onto a serving board and carefully remove the plastic wrap from each. Serve immediately with soy sauce for dipping and enjoy these creative sushi bites.

- Use sushi-grade fish to ensure freshness and safety when consuming raw seafood.
- Press the rice gently to avoid crushing the fillings but make sure cubes hold together.
- Mayonnaise can be substituted with spicy mayo for extra flavor.
- These sushi cubes are best consumed fresh on the day of preparation.
- To make this recipe easier to serve at parties, prepare multiple trays ahead of time and keep chilled until serving.
