Ingredients
Salad
- 10 oz baby greens
- 1 cup fresh blueberries
- 1 cup fresh strawberries, quartered
- ½ cup crumbled feta cheese (or blue cheese/goat cheese as an alternative)
- 1 cup candied walnuts
White Balsamic Vinaigrette Dressing
- ¼ cup white balsamic vinegar
- ½ cup olive oil
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- Salt and freshly ground black pepper to taste
Candied Walnuts
- 1 cup walnuts
- 2 tbsp sugar
- 1 tbsp water
Instructions
- Prepare Candied Walnuts: In a small skillet over medium heat, combine walnuts, sugar, and water. Stir continuously until the sugar dissolves and coats the walnuts evenly, becoming glossy. Transfer the walnuts onto parchment paper to cool and harden.
- Make White Balsamic Vinaigrette: In a small bowl or jar, whisk together white balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper until emulsified. Adjust seasoning to taste.
- Assemble the Salad: Place the baby greens in a large salad bowl. Top with fresh blueberries, quartered strawberries, crumbled feta cheese, and cooled candied walnuts.
- Dress the Salad: Add the white balsamic vinaigrette dressing just before serving. Toss gently to coat the salad ingredients evenly. Alternatively, serve dressing on the side to allow guests to add their preferred amount.
- Serve: Serve immediately to enjoy the crispness of the greens and the crunch of the candied walnuts alongside the sweet and tangy berries and creamy cheese.
Notes
- For a nut-free version, omit the candied walnuts or substitute with roasted seeds.
- Swap feta cheese with goat cheese or blue cheese depending on your preference.
- Use fresh, ripe berries for the best flavor and texture.
- The dressing can be prepared in advance and stored in the refrigerator for up to 3 days.
- Serve this salad chilled for maximum freshness.
