Ingredients

Stuffed Dates

  • 20 medjool dates
  • ⅓ cup peanut butter (80g), may need slightly more if dates are large

Chocolate Drizzle

  • ¼ cup coconut oil (50g)
  • ¼ cup cacao or cocoa powder (15g)
  • ½ cup dark chocolate or chocolate chips (70g)
  • Sea salt flakes, for sprinkling


Instructions

  1. Prepare the baking tray: Line a large baking tray with parchment paper to prevent the dates from sticking during the chocolate drizzling process.
  2. Prepare dates: Slice open each medjool date lengthwise and carefully remove the pits. Place the pitted dates evenly spaced on the lined baking tray.
  3. Stuff dates with peanut butter: Using a spoon, fill the hollow of each date with just under 1 teaspoon of peanut butter, ensuring each date is nicely stuffed but not overflowing.
  4. Make the chocolate drizzle: In a small microwave-safe bowl, add the coconut oil and microwave for about 30 seconds until melted, or alternatively melt it using a double boiler. Stir in the cacao powder thoroughly until the mixture is smooth and cohesive. If using pre-made dark chocolate or chocolate chips, break them into pieces and microwave for 30 seconds until melted, stirring well.
  5. Drizzle chocolate on dates: Allow the chocolate mixture to cool slightly so it thickens a bit but is still pourable. Using a spoon, drizzle the chocolate over each stuffed date or, if preferred, dip the dates individually into the chocolate. Sprinkle sea salt flakes over the chocolate-coated dates for enhanced flavor.
  6. Set the chocolate: Place the baking tray in the refrigerator and chill until the chocolate has completely hardened, approximately 20 minutes.
