Description

Ingredients

Crust

  • 1 1/4 cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • 1/4 cup salted butter, melted

Filling

  • 1 1/3 cups whipping cream, chilled
  • 6 1/2 oz good quality white chocolate, coarsely chopped

Topping

  • 1 lb fresh Driscoll’s strawberries, halved (or large berries quartered)
  • 2 tbsp strawberry jam


Instructions

  1. Prepare the crust: Preheat your oven to 350ºF. In a medium bowl, mix the graham cracker crumbs with sugar, then add the melted butter, stirring until the mixture is fully combined. Press this crumb mixture firmly into a 9-inch tart pan with a removable bottom. Bake for 10 minutes, then allow to cool completely on a wire rack.
  2. Make the chocolate mixture: In a microwave-safe bowl, combine the coarsely chopped white chocolate with 1/3 cup of the chilled whipping cream. Microwave on 50% power for one minute, then stir. Continue microwaving in 30-second intervals until the chocolate is about 75% melted, stirring to melt the rest. Let the mixture cool to room temperature on the counter to avoid uneven cooling or hardening.
  3. Whip the cream and fold: Using an electric mixer, whip the remaining cream until stiff peaks form. Fold one-third of the whipped cream carefully into the cooled white chocolate mixture by gently cutting through the center with a spatula and scooping back over until incorporated. Then, fold in the remaining whipped cream gently to maintain the mousse’s light texture.
  4. Assemble and chill: Spoon the mousse filling into the cooled crust and smooth the top evenly. Refrigerate the tart for 2 to 3 hours to set the mousse.
  5. Add the strawberry topping and glaze: Arrange the halved or quartered strawberries over the set mousse. Heat the strawberry jam in a small saucepan or microwave until melted, then brush the glaze gently over the strawberries to give them a shiny finish. Serve immediately or chill for an additional 30 minutes to set the glaze.
