Description

This luscious Strawberry Tiramisu is a delightful twist on the classic Italian dessert, featuring layers of ladyfinger cookies soaked in a fresh strawberry puree and creamy mascarpone mixture. Perfectly chilled and adorned with fresh strawberries and chocolate shavings, it’s a refreshing and elegant treat for any occasion.

Ingredients

Strawberry Puree

  • 1.5 cup Strawberries
  • 2-3 tbsp Sugar
  • 1/2 cup Water

Mascarpone Mixture

  • 1 cup Mascarpone cheese
  • 1/2 cup Cream
  • 1/3 cup Icing sugar
  • 1/2 tsp Vanilla bean paste

Others

  • 16 Ladyfinger cookies
  • Fresh strawberries for topping
  • Chocolate shavings for topping

Instructions

  1. Prepare dessert glasses: Keep 8 dessert glasses or bowls ready to assemble the tiramisu.
  2. Make the strawberry puree: Combine the strawberries, sugar, and water in a blender. Blend until smooth to form the puree. Taste and adjust sweetness as needed.
  3. Make the mascarpone mixture: In a bowl, combine mascarpone cheese, cream, icing sugar, and vanilla bean paste. Using an electric mixer, beat the mixture until it becomes thick and creamy.
  4. Assemble the tiramisu – first layer: Dip a ladyfinger cookie into the strawberry puree briefly to soak. Place it at the bottom of each glass, breaking cookies if needed to fit.
  5. Add puree and mascarpone: Spoon 1-2 teaspoons of strawberry puree over the soaked cookie layer, then add a heaped tablespoon of the mascarpone mixture on top.
  6. Assemble the tiramisu – second layer: Repeat by adding another layer of dipped ladyfinger cookies, followed by strawberry puree and mascarpone mixture. Add a little puree on top of the final mascarpone layer.
  7. Repeat for all glasses: Continue layering in this order until all glasses are filled.
  8. Chill: Refrigerate the assembled tiramisus for at least 4 hours to allow flavors to meld and the dessert to set properly.
  9. Garnish and serve: Before serving, top each glass with fresh strawberries and chocolate shavings for garnish. Enjoy your refreshing strawberry tiramisu!

Notes

  • For best results, use fresh, ripe strawberries to enhance the flavor of the puree.
  • If you prefer, adjust the sugar quantity to suit your sweetness preference.
  • Ensure to soak the ladyfingers only briefly to prevent them from becoming too soggy.
  • The dessert can be assembled a day ahead and kept refrigerated for convenience.
  • Chocolate shavings can be substituted with grated white chocolate or cocoa powder if desired.
