Description

Delight in these refreshing Strawberry Shortcake Ice Cream Bars, combining creamy coconut milk with sweet strawberry jam, a crunchy rice crispies and freeze-dried strawberry coating, and a smooth white chocolate magic shell. Perfect for a cool summer treat that’s both fun to make and delicious to eat.

Ingredients

Main Ingredients

  • 3 cups canned coconut milk or heavy cream
  • 1 jar (12-16 ounces) strawberry jam
  • 2 teaspoons vanilla extract
  • 6 ounces white chocolate, chopped
  • 1 tablespoon coconut oil
  • 2 cups freeze dried strawberries
  • 1 cup brown rice crispies

Instructions

  1. Prepare the Ice Cream Mixture: In a bowl or blender, blend together the coconut milk or heavy cream, strawberry jam, and vanilla extract until smooth and well combined.
  2. Fill Popsicle Molds: Evenly divide the ice cream mixture between 8 popsicle molds or paper dixie cups, then place them in the freezer to set.
  3. Make the Magic Shell: Melt the white chocolate and coconut oil together in the microwave on intervals, stirring every 30 seconds until smooth. Allow to cool for about 10 minutes so it thickens slightly.
  4. Prepare the Coating Crumbs: Add the freeze dried strawberries and brown rice crispies to a blender or ziplock bag and crush them into fine crumbs. Transfer the crumbs into a shallow bowl or pie plate for easy coating.
  5. Coat the Ice Cream Bars: Once the ice cream bars are fully frozen, remove them from the molds, dip each bar into the white chocolate magic shell, then roll them through the strawberry and rice crispies crumbs to coat evenly.
  6. Freeze and Serve: Eat immediately or place the coated bars back in the freezer until ready to enjoy.

Notes

  • For a richer flavor, use heavy cream instead of coconut milk.
  • If you don’t have popsicle molds, small paper cups with sticks work well.
  • Ensure the magic shell is cool before dipping to prevent melting the bars prematurely.
  • To crush the freeze dried strawberries and rice crispies, a rolling pin or food processor works best.
  • Store leftover ice cream bars in an airtight container in the freezer for up to one week.
