Description

Strawberry Sago is a refreshing, creamy dessert featuring translucent tapioca pearls soaked in a blend of coconut milk, regular milk, fresh strawberries, and sweetened condensed milk. Enhanced with a touch of strawberry jam and textured coconut jellies, this easy-to-make treat offers a delightful balance of fruity sweetness and creamy richness, perfect for a light dessert or snack.


Ingredients

Sago Pearls

  • ½ cup small tapioca pearls

Main Mixture

  • 3 cups chopped strawberries (divided)
  • 1 cup coconut milk (any type)
  • 1 cup milk
  • 1 tablespoon strawberry jam

Add-ins

  • ¼ cup sweetened condensed milk
  • 1 jar coconut jellies (nata de coco)


Instructions

  1. Cook the Tapioca Pearls: Bring a medium pot of water to a boil. Add the small tapioca pearls and reduce to a gentle boil. Cook for 25-30 minutes, stirring occasionally, until the pearls become fully translucent. If after 30 minutes some pearls still have a white center, continue cooking a few more minutes, adding more water if necessary to prevent sticking and to achieve transparency.
  2. Rinse and Drain: Once cooked, rinse the tapioca pearls under cold water to remove excess starch and to cool them down. Drain thoroughly and transfer the pearls into a large mixing bowl.
  3. Blend the Strawberry Base: In a blender, combine half of the chopped strawberries, coconut milk, regular milk, and strawberry jam. Blend until the mixture is smooth and well combined. Pour this blended mixture into the bowl containing the tapioca pearls.
  4. Combine and Chill: Gently stir in the remaining chopped strawberries, sweetened condensed milk, and coconut jellies (nata de coco) into the tapioca mixture. You may enjoy the dessert immediately or cover and chill it in the refrigerator for about an hour to enhance its refreshing flavor.

Notes

  • Ensure the tapioca pearls are fully translucent before draining to avoid a chalky texture.
  • Adjust the sweetness by increasing or decreasing the amount of sweetened condensed milk or strawberry jam according to your taste preference.
  • For a vegan version, substitute regular milk with plant-based milk alternatives like almond or soy milk and use vegan sweetened condensed milk.
