Description

This Strawberry Poke Cake is a delightful and refreshing dessert featuring a moist white cake infused with strawberry-flavored gelatin, topped with fluffy whipped cream and fresh strawberries. Perfectly sweet and bursting with fruity flavor, this cake is ideal for gatherings and celebrations.

Ingredients

Cake

  • 1 box white cake mix (15 ounces)
  • Water, butter, milk, and eggs (as per cake mix box instructions)

Gelatin Topping

  • 3 ounces strawberry-flavored gelatin
  • 1 cup boiling water

Toppings

  • 8 ounces frozen whipped topping (thawed)
  • 1 ½ cups fresh strawberries (sliced)

Instructions

  1. Preheat and Prepare Pan: Set your oven to 350°F (180°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it to prevent sticking.
  2. Make the Cake Batter: Prepare the cake mix according to the box instructions, usually mixing the cake mix with water, oil or butter, and eggs. Beat with an electric mixer for about 2 minutes until smooth and well combined.
  3. Bake the Cake: Pour the batter into the prepared baking dish and smooth the top evenly. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean or the cake springs back when lightly touched.
  4. Cool and Poke Holes: Allow the cake to cool in the pan for 20 minutes. Using the handle of a wooden spoon or a thick straw, poke holes about 1 inch apart all over the cake surface to create space for the gelatin to seep in.
  5. Prepare Strawberry Gelatin: In a large measuring cup or bowl, dissolve the strawberry gelatin with 1 cup of boiling water. Stir thoroughly until completely dissolved.
  6. Soak the Cake: Carefully pour the dissolved gelatin evenly over the cake, letting it soak through the holes for maximum flavor infusion.
  7. Chill and Top: Let the cake cool completely to room temperature, then spread the thawed whipped topping evenly over the surface. Cover and refrigerate the cake for at least 4 hours, preferably overnight, so it sets properly.
  8. Garnish and Serve: Just before serving, garnish the cake with fresh sliced strawberries for an attractive and fresh finish. Slice, serve, and enjoy this fruity treat!

Notes

  • Using fresh strawberries on top adds a vibrant freshness and texture contrast.
  • For best results, allow the cake to chill overnight to fully soak the gelatin.
  • Ensure the whipped topping is fully thawed before spreading for easier application.
  • Poking evenly spaced holes ensures even gelatin absorption throughout the cake.
  • You can substitute strawberry gelatin with other flavors for variation.
