Description
This light and fluffy whipped strawberry mousse is a quick and easy dessert perfect for almost any occasion, combining the creamy richness of cream cheese or coconut cream with the fresh sweetness of strawberries.
Ingredients
Base
- 8 oz cream cheese or coconut cream
- 4 oz yogurt or additional cream cheese or coconut cream
- 1 cup powdered sugar or sugar free alternative
Fruit
- 5 medium size strawberries, stemmed
Optional Flavoring
- 1/4 tsp vanilla bean paste (optional)
Instructions
- Prepare Cream Base: If using cream cheese, allow it to come to room temperature to soften; if using coconut cream, open the can and ensure the content is thick and creamy as a flaky consistency is unsuitable for mousse.
- Puree Strawberries: Remove stems from strawberries and blend or mash them until pureed to create the fresh fruit base.
- Combine Ingredients: Add the pureed strawberries, cream cheese or coconut cream, yogurt or extra cream base, powdered sugar, and optional vanilla bean paste into a food processor, blender, or use a hand mixer.
- Blend Until Smooth: Blend all ingredients together until the mixture is completely smooth and light in texture.
- Chill and Serve: Transfer the mousse into serving dishes and refrigerate to allow it to thicken considerably before serving.
Notes
- Ensure coconut cream is thick and creamy; flaky or hard coconut cream will not work well for mousse.
- For a sugar-free version, substitute powdered sugar with your preferred sugar-free alternative.
