Ingredients
Crust
- 2 cups graham cracker crumbs
- 1/2 cup confectioners’ sugar
- 8 tablespoons butter, melted
Filling
- 3 packages (8 ounces each) cream cheese, softened
- 1 cup confectioners’ sugar
- 2 teaspoons vanilla extract
- 1 tub (16 ounces) frozen whipped topping, thawed, divided
Layers
- 3/4 cup strawberry preserves
- 1 package (3 ounces) strawberry gelatin
- 1/3 cup boiling water
- 1 cup chopped fresh strawberries, plus more for garnish
Instructions
- Prepare the graham cracker crust: In a bowl, combine the graham cracker crumbs, confectioners’ sugar, and melted butter. Press this mixture evenly into the bottom of a 13×9-inch pan to form the crust.
- Make the cream cheese filling: Using a stand mixer fitted with a paddle attachment, beat the softened cream cheese, vanilla extract, and confectioners’ sugar until smooth, about 2 to 3 minutes. Fold in half of the thawed whipped topping gently. Spread half of this cream cheese filling evenly over the graham cracker crust. Set the remaining cream cheese filling and whipped topping aside.
- Add a layer of preserves: Spread a thin, even layer of strawberry preserves over the cream cheese layer in the pan.
- Mix the strawberry filling: In a small glass measuring cup, whisk together the strawberry gelatin powder and boiling water until the gelatin is fully dissolved. Add this gelatin mixture to the reserved cream cheese filling and beat until smooth. Fold in the chopped fresh strawberries gently.
- Finish layering the lasagna: Spread the strawberry gelatin cream cheese filling evenly over the layer of preserves in the pan.
- Finish it with whipped topping: Spread the remaining whipped topping in an even layer on top of the strawberry filling. Cover the assembled dessert and refrigerate for at least 4 hours or overnight to allow it to set and flavors to meld.
- Decorate the lasagna: Before serving, decorate the top with additional fresh sliced strawberries. Cut into squares and serve chilled.
Notes
- Ensure the cream cheese is fully softened before mixing to avoid lumps in the filling.
- Refrigerate the lasagna for at least 4 hours or overnight for best texture and flavor.
- Use fresh strawberries for garnish to enhance presentation and freshness.
- This dessert is best served chilled to maintain its structure and creaminess.
