Cracker Base
- 2 boxes graham crackers
Cream Filling
- 1 cup heavy cream
- 8 ounce package cream cheese
- 5 tablespoons granulated sugar
- 1 1/2 teaspoons vanilla extract
Fruit Topping
- 1 cup strawberries, sliced
- 1/2 cup strawberries, cut in half (for top of cake)
Optional
- 1/4 cup melting chocolate wafers
Instructions
- Line the Pan. Line a 9×9-inch pan with the graham crackers, arranging them neatly to cover the bottom and sides, and set aside for layering.
- Prepare the Cream Filling. In a large bowl, pour the heavy cream and use an electric mixer on medium speed to whip it until stiff peaks form, which typically takes about 4 to 5 minutes. Then add in the cream cheese, granulated sugar, and vanilla extract, mixing just until smooth and fully combined.
- Assemble Layers. Spread one third of the cream filling mixture evenly over the graham crackers. Then sprinkle one third of the sliced strawberries on top. Repeat this process two more times to build three layers of cream and strawberries, reserving the strawberry halves intended for the cake’s top layer.
- Chill the Cake. Place the assembled cake in the refrigerator for at least one hour. This chilling time allows the graham crackers to soften, melding the layers into a creamy, cohesive dessert.
- Finish and Serve. Just before serving, arrange the reserved strawberry halves on top of the cake. Optionally, slice the cake and drizzle with melted chocolate wafers for an extra touch of flavor and visual appeal.
