Description

Strawberry Crunch Cheesecake Tacos combine crispy white chocolate-coated tortilla shells with a creamy, smooth cheesecake filling, topped with fresh strawberries and luscious strawberry syrup. Perfect for a delightful dessert that’s both visually appealing and bursting with fresh strawberry flavor.

Ingredients

Taco Shells:

  • 5 large flour tortillas
  • 1 tablespoon unsalted butter, melted
  • 13 ounces white chocolate
  • Strawberry crunch crumbs (from fresh strawberries or store-bought strawberry crisp crumbs)

Cheesecake Filling:

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Topping:

  • 2/3 cup strawberry syrup
  • 2 cups fresh strawberries, diced or halved

Instructions

  1. Prepare Tortilla Shells: Cut the flour tortillas into 4-inch circles using a cookie cutter, making 15 circles total. Brush each circle lightly with melted butter. Place each circle over an upside-down muffin tin to form a taco shell shape.
  2. Bake Shells: Bake the shaped tortillas at 350°F (175°C) for 5-6 minutes or until edges turn golden brown. Allow them to cool for a minute in the muffin tin, then transfer to a parchment-lined baking sheet to cool completely.
  3. Melt White Chocolate: Using a double boiler method, place chopped white chocolate in a glass bowl over simmering water, ensuring the bowl doesn’t touch the water. Stir constantly until melted smoothly. Alternatively, melt carefully in the microwave in 20-second intervals, stirring between each until fully melted without burning.
  4. Coat Tortilla Shells with Chocolate and Strawberry Crunch: Using a brush, coat each cooled taco shell inside and out with the melted white chocolate. Immediately dip and press the chocolate-coated shells into strawberry crunch crumbs to evenly coat. Place coated shells on parchment paper and allow chocolate to set and harden.
  5. Make Cheesecake Filling: In a mixing bowl, beat softened cream cheese, powdered sugar, and vanilla extract until creamy and smooth. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until smooth but not overmixed. Transfer filling into a piping bag.
  6. Fill the Taco Shells: Arrange hardened shells upright in an inverted muffin tin or a 9×13-inch dish to keep them standing. Pipe the cheesecake filling generously into each shell.
  7. Add Toppings: Finish each cheesecake taco by topping with diced or halved fresh strawberries and drizzling strawberry syrup over the top for added flavor and appearance.

Notes

  • Use fresh, ripe strawberries for the best flavor and texture in the topping and strawberry crunch.
  • Carefully monitor the white chocolate while melting to prevent burning or seizing.
  • Refrigerate the assembled tacos for 30 minutes before serving for a firmer texture and enhanced flavor melding.
  • These tacos are best enjoyed the same day but can be stored in the refrigerator for up to 2 days.
  • For a gluten-free version, substitute the flour tortillas with gluten-free tortillas.
