Description

A delightful, no-bake Strawberry Crunch Banana Pudding combining creamy vanilla pudding, fresh bananas and strawberries, layers of vanilla wafers, and a crunchy strawberry sugar wafer topping. Perfectly chilled to soften the wafers and enhance flavors, this easy dessert serves 12 and is ideal for gatherings or a sweet treat any time.

Ingredients

Base and Pudding

  • 2/3-1 (11 oz) Box of Nilla or Vanilla Wafers
  • 5.1 oz Vanilla or Banana Creme Instant Pudding
  • 3 cups Whole Milk
  • 8 oz Whipped Topping or Cool Whip, Thawed (divided into 2 portions)

Fresh Fruit

  • 2-4 medium Bananas
  • 8-10 Fresh Strawberries

Crunchy Topping

  • 4-6 Pink Strawberry Sugar Wafers
  • 8 Vanilla Cookies or Golden Oreos

Instructions

  1. Choose the Baking Dish: Decide whether to use an 8×8 or a 9×13 baking dish. The larger 9×13 dish requires the full box of vanilla wafers plus more fresh bananas and strawberries. The strawberry crunch topping yields about 1 1/2 cups, sufficient for either size with extra for garnish.
  2. Prepare the Strawberry Crunch Topping: Using a food processor, pulse the vanilla cookies and pink strawberry wafers until finely crumbled. Alternatively, place them in a zip-top bag and crush with a rolling pin until crumbly. Set this mixture aside for topping the pudding.
  3. Make the Pudding Mixture: In a large bowl, whisk together the instant vanilla or banana creme pudding mix and whole milk. Allow the pudding to set until thickened as per package instructions.
  4. Fold in Whipped Topping: Gently fold half of the whipped topping into the pudding mixture, reserving the remaining half for the final layer of the dessert.
  5. Prepare Fresh Fruit: Rinse and dry strawberries, then hull and slice them. Peel and slice the bananas as well. Set both aside for layering.
  6. Assemble the First Layer: Spoon a few large dollops of the pudding mixture into the baking dish, spreading into an even layer. Follow by adding a layer of vanilla wafers, then evenly distribute sliced strawberries and bananas on top.
  7. Layer Again: Spoon more pudding mixture over the fruit to create a second layer, spreading evenly. Repeat layering once more with pudding mixture and then carefully spread the reserved whipped topping over the final pudding layer.
  8. Add Crunchy Topping: Sprinkle the crumbled strawberry sugar wafer and vanilla cookie mixture evenly on top. Garnish with 9 to 15 whole vanilla wafers for extra texture and presentation.
  9. Chill: Cover the dish tightly with plastic wrap and refrigerate for at least 3 hours, preferably overnight. This resting time allows the wafers to soften and the flavors to meld beautifully.
  10. Serve: Before serving, optionally top with additional fresh strawberry and banana slices. Enjoy this creamy, fruity, and crunchy layered dessert chilled.

Notes

  • For best results, use whole milk to achieve a rich and creamy pudding texture.
  • You can adjust the number of bananas and strawberries based on the size of your baking dish and personal preference.
  • Chilling overnight enhances wafer softness and flavor melding.
  • Use gluten-free wafers and cookies if you need a gluten-free version.
  • Make sure whipped topping is thawed completely before folding into pudding to ensure smooth blending.
  • This dessert is best served chilled and consumed within 2 days for optimal freshness.
