Ingredients

Fruit Puree

  • ¾ pound fresh strawberries
  • 2 tablespoons sugar (half of the total sugar)

Coconut Mixture

  • 1 can (13.5 ounces) full-fat coconut milk
  • 2 tablespoons sugar (remaining sugar)

Topping

  • 3 tablespoons graham cracker crumbs


Instructions

  1. Puree Strawberries: In a high-speed blender, combine the fresh strawberries with half of the sugar (2 tablespoons) and blend until smooth and frothy, creating a vibrant strawberry puree.
  2. Prepare Coconut Milk: Stir the remaining sugar (2 tablespoons) thoroughly into the coconut milk, ensuring the thick coconut cream layer is fully mixed in and the sugar completely dissolves for a sweet, smooth coconut base.
  3. Assemble Popsicles: Pour the coconut milk mixture and strawberry puree alternately into your ice pop molds in layers to create a beautiful striped effect. Insert a wooden stick into the center of each mold.
  4. Add Graham Cracker Topping: Sprinkle graham cracker crumbs evenly over each popsicle for added texture and flavor.
