Description

This Strawberry Cobbler is a classic American dessert featuring a luscious, bubbling strawberry filling covered with a tender, biscuit-like topping. Baked to golden perfection, it combines fresh strawberries with a sweet and tangy cobbler crust, perfect for serving warm with ice cream or whipped cream.

Ingredients

Strawberry Filling

  • 8 cups fresh sliced strawberries
  • 1 cup granulated sugar
  • 1/2 cup cornstarch
  • 1 tablespoon fresh lemon juice

Cobbler Topping

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup cold (preferably frozen) butter, grated
  • 1 1/4 cups buttermilk

Instructions

  1. Prepare Fruit Mixture: In a large bowl, combine 8 cups of fresh sliced strawberries with 1 cup granulated sugar, 1/2 cup cornstarch, and 1 tablespoon fresh lemon juice. Stir until the strawberries are fully coated. Set this mixture aside to allow the berries to release their juices.
  2. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with nonstick baking spray to prevent sticking and to make cleanup easier.
  3. Make Cobbler Dry Mix: In another large bowl, mix 2 cups all-purpose flour, 1/2 teaspoon salt, 2 tablespoons granulated sugar, 1 1/2 teaspoons baking powder, and 1/2 teaspoon baking soda until well combined.
  4. Add Butter to Dry Ingredients: Using a grater, grate 1/2 cup of cold (preferably frozen) butter directly into the flour mixture, stirring occasionally to distribute the butter evenly and prevent it from clumping together.
  5. Combine Butter and Dry Ingredients: Stir the grated butter into the dry ingredients one more time to ensure even distribution.
  6. Add Buttermilk: Pour 1 1/4 cups buttermilk into the butter and flour mixture. Stir gently and just until everything is combined; do not overmix to keep the topping tender.
  7. Distribute Fruit Mixture: Give the strawberry mixture a final stir to redistribute the sugar and cornstarch evenly. Pour it into the prepared baking dish and spread it out evenly.
  8. Add Cobbler Topping: Drop dollops of the cobbler batter evenly over the strawberry filling in the baking dish to create a biscuit-like topping.
  9. Bake the Cobbler: Place the baking dish in the preheated oven and bake for 50 to 55 minutes. Bake until the topping is golden brown and the strawberry filling is bubbling. You can check by gently lifting the topping to ensure it is fully cooked underneath.
  10. Serve: Serve the strawberry cobbler warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream for an indulgent finish.
  11. Store: After cooling, cover and store the cobbler in the fridge. It can be reheated before serving for best enjoyment.

Notes

  • Using frozen butter and grating it into the flour helps create a flaky, tender topping.
  • Make sure not to overmix the batter after adding buttermilk to keep the cobbler light and fluffy.
  • The strawberry mixture needs to rest to release enough juice, which helps create a jammy filling.
  • Check the topping doneness by lifting it gently to avoid undercooked dough.
  • Serve warm with ice cream or whipped cream for the best taste experience.
  • Leftovers can be refrigerated and reheated gently before serving.
