Description

This Strawberry Cheesecake Tiramisu is a delightful twist on the classic tiramisu, featuring layers of lady fingers soaked in a reduced pomegranate juice syrup, fresh strawberries, and a creamy mixture of cream cheese and whipped cream. Lightly sweetened and bursting with fruity flavors, this no-bake dessert is perfect for summer gatherings or elegant dinners.


Ingredients

Syrup:

  • 1 1/2 cups pomegranate juice
  • 2 Tbsp granulated sugar

Cream Mixture:

  • 1 1/4 cups heavy cream
  • 12 oz. cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract (optional)

Assembly:

  • 32 lady fingers (from 2 packages)
  • 1 1/2 lbs chopped strawberries, stems removed, plus more for garnish if desired


Instructions

  1. Prepare Pomegranate Syrup: Pour pomegranate juice into a small saucepan and bring to a simmer over medium heat. Let it simmer gently until the liquid is reduced by half, approximately 6 to 10 minutes. Stir in 2 tablespoons of granulated sugar until fully dissolved. Remove from heat and pour into a shallow dish to cool completely.
  2. Whip Heavy Cream: Pour cold heavy cream into a medium mixing bowl. Using an electric hand mixer, whip the cream until very stiff peaks form, indicating it is firm and stable.
  3. Mix Cream Cheese Mixture: In a separate mixing bowl, beat the softened cream cheese, remaining 1/2 cup granulated sugar, and vanilla extract on low speed until combined. Increase to high speed and whip for about 2 to 3 minutes until the mixture becomes light, fluffy, and smooth.
  4. Combine Cream and Cream Cheese: Add the whipped heavy cream into the cream cheese mixture. Gently fold and blend just until combined to maintain the airy texture.
  5. Soak Lady Fingers: Working with one lady finger at a time, quickly dip both sides into the cooled reduced pomegranate juice syrup. Immediately transfer the soaked lady finger to a deep 9 by 9-inch baking dish. Repeat to create a single layer of half the lady fingers set side by side.
  6. Add Strawberry and Cream Layers: Spread half of the chopped strawberries evenly over the layer of lady fingers. Then, spread half of the cream cheese mixture over the strawberries in an even layer.
  7. Repeat Layers: Repeat the dipping process with the remaining lady fingers, placing them side by side on top of the first cream layer. Top the lady fingers with the remaining strawberries, followed by the remaining cream cheese mixture to form the final layer.
  8. Chill the Dessert: Cover the assembled tiramisu with plastic wrap or a tight-fitting lid. Refrigerate the dessert for at least 4 hours to set and allow flavors to meld.
  9. Serve: Optionally garnish the top with additional fresh strawberries before serving. For optimal texture and freshness, cut and serve the tiramisu within 24 hours, as the strawberries will start to break down and the lady fingers can become soggy over time.
