Yeast Mixture

Dough
- 280 grams all purpose flour
- 50 grams granulated sugar
- 50 grams milk
- 2 egg yolks
- 40 grams soft butter
- 3 liters sunflower oil (for deep frying)
Filling
- 150 grams cream cheese
- 50 grams powdered sugar
- 80 grams strawberry jam

- 6 fresh strawberries
- 1 tablespoon powdered sugar (for dusting)
Instructions
- Prepare Yeast Mixture: In a bowl, combine warm water, active dry yeast, and 1 tablespoon of granulated sugar. Stir gently and let it rest for about 10 minutes until the mixture becomes bubbly and frothy, indicating that the yeast is active.
- Mix Dough Ingredients: In a stand mixer bowl or large mixing bowl, combine the all-purpose flour and 50 grams granulated sugar. Add the two egg yolks, soft butter, and milk. Once the yeast mixture is ready, add it to the bowl with the dry ingredients.
- Knead Dough: Using a stand mixer fitted with a dough hook attachment, knead the dough on medium speed for 15 to 20 minutes until it becomes smooth and elastic. If kneading by hand, knead until the dough is similarly developed.
- Proof Dough: Lightly grease a bowl and place the dough inside. Cover and allow it to proof in a warm environment at approximately 29°C (84°F) for 1 hour and 30 minutes or until the dough has doubled in size.
- Shape Donuts: After the dough has doubled, roll it out on a floured surface to about 0.25 cm (0.1 inches) thickness. Using a 6 cm (2.36 inch) cookie cutter, cut out donut rounds. Place them on a baking sheet and proof again in the warm environment for 30 minutes or until donuts are puffed up to about 0.5 cm (0.2 inches) thick.
- Heat Oil: Heat sunflower oil in a deep frying pan or deep fryer to 180°C (356°F). Maintain the temperature around 175°C (347°F) when frying by adjusting heat as donuts are added.
- Fry Donuts: Carefully fry the donuts in the hot oil, cooking each side for about 2 minutes until golden brown. Flip once more if needed to ensure even golden coloring all around. Remove the donuts with a slotted spoon when done.
- Drain Oil: Place the fried donuts on a plate lined with paper towels to absorb any excess oil. Allow them to cool slightly before filling.
- Prepare Strawberry Cheesecake Filling: In a bowl, mix the cream cheese with powdered sugar until smooth. Fold in the strawberry jam until fully incorporated and creamy.
