Ingredients
Cheesecake Base
- 160g biscuits or graham crackers (around 1.5 cups of graham cracker crumbs or 10-12 graham crackers)
- 80g salted butter, melted (1/4 cup + 2 tablespoons)
Cheesecake Filling
- 500g cream cheese, at room temperature (17.75 oz)
- 140g granulated sugar (1/2 cup + 2 tablespoons)
- 1 teaspoon vanilla extract
- 2 large eggs, at room temperature
- 7g cornstarch or cornflour (1 tablespoon)
- 1/4 teaspoon salt
- 80ml heavy cream or double cream (1/4 cup + 1 tablespoon)
Strawberry Topping
- 300g strawberries, chopped (around 10.7 oz or around 1.5 cups)
- 50g granulated sugar (3 tablespoons + 1 teaspoon)
Crumble Topping
- 100g plain flour or all-purpose flour (1/2 cup + 2 tablespoons)
- 65g light brown sugar (1/4 cup + 1 tablespoon, packed)
- 65g unsalted butter, at room temperature (1/4 cup + 1 tablespoon)
Instructions
- Make strawberry topping: Place half of the chopped strawberries in a pot. Add granulated sugar and stir over medium heat until the strawberries release liquid and form a syrup, adding a small amount of water if needed. Let simmer until the strawberries become mushy and the syrup thickens. Remove from heat and allow to cool completely. Once cooled, mix in the remaining fresh chopped strawberries.
- Prepare crust: Preheat the oven to 180°C (350°F) and grease and line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal. Crush the biscuits or graham crackers into fine crumbs using a food processor or rolling pin in a sealed bag. Combine the crumbs with melted butter until the mixture holds together slightly. Press evenly into the bottom of the prepared baking dish using a flat-bottomed glass or measuring cup. Refrigerate while preparing the filling.
- Make cheesecake filling: In a bowl, soften cream cheese by stirring until creamy. Add granulated sugar and whisk until sugar dissolves and mixture becomes smooth and thick. Stir in vanilla extract. Add eggs one at a time, mixing thoroughly after each addition. Sift cornstarch over the mixture and fold in gently, then mix in salt. Add heavy cream and fold until combined into a smooth, creamy batter.
- Bake cheesecake base: Pour the cheesecake filling over the chilled crust in the baking dish. Bake at 180°C (350°F) for 35-40 minutes until the top is soft but set enough to hold the topping, and the cheesecake wobbles when the pan is gently shaken.
- Prepare crumble topping: In a bowl, combine flour and brown sugar. Add room temperature butter and rub with fingers until the mixture forms small and larger crumbs.
- Add toppings and bake: Remove the cheesecake from the oven while still wobbly but set on top. Evenly spread the cooled strawberry topping over the cheesecake. Sprinkle the crumble topping over the strawberries. Return to the oven and bake for an additional 20 minutes at 180°C (350°F) until the crumble is golden brown.
- Cool and set: Let the cheesecake cool in the pan at room temperature for 10-15 minutes. Then refrigerate for at least several hours or preferably overnight to set completely.
- Serve: Use the parchment overhang to lift the cheesecake from the pan. Slice into even squares with a sharp knife. Serve chilled and enjoy.
