  • ¾ cup granulated sugar (150g)
  • ½ cup whole milk (120mL)
  • ½ cup vegetable oil (120mL)
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
  • 2 cups plus 2 tablespoons all-purpose flour (255g, divided)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 ½ cups diced fresh strawberries (230g)

Glaze Ingredients

  • 3 tablespoons diced fresh strawberries
  • 1 cup powdered sugar (120g)
  • 1 teaspoon whole milk


Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly spray a 9×5-inch loaf pan with baking spray to prevent sticking. Alternatively, you can use an 8½x4½ inch pan if you prefer a slightly taller loaf.
  2. Mix Wet Ingredients: In a medium bowl, whisk together the granulated sugar, whole milk, vegetable oil, egg, and vanilla extract until well combined.
  3. Mix Dry Ingredients: In another medium bowl, stir together 2 cups (240g) of all-purpose flour, baking powder, and salt ensuring everything is evenly distributed.
  4. Combine Wet and Dry Mixtures: Add the dry flour mixture to the wet ingredients and stir gently just until combined. Avoid overmixing to keep the bread tender.
  5. Prepare Strawberries: In a small bowl, toss the 1 ½ cups of diced strawberries with the reserved 2 tablespoons of flour. This will help prevent the fruit from sinking to the bottom during baking.
  6. Fold Strawberries into Batter: Carefully fold the floured strawberries into the batter, distributing them evenly without crushing the fruit.
  7. Transfer to Pan and Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 55 to 60 minutes, or until a wooden pick inserted into the center comes out clean.
  8. Cool the Bread: Let the bread cool in the pan for 10 minutes. Then remove it from the pan and transfer to a wire rack to cool completely.
  9. Make the Glaze: In a small bowl, mash the 3 tablespoons of diced fresh strawberries. Stir in the powdered sugar and 1 teaspoon of whole milk until smooth.
