  • 2 teaspoons vanilla extract (divided)
  • ½ cup (119ml) vegetable oil
  • ⅓ cup (67g) granulated sugar
  • 2 cups (244g) Krusteaz Pancake Mix
  • 1 cup (149g) chopped strawberries

Glaze Ingredients

  • ¾ cup (86g) powdered sugar
  • ⅛ teaspoon strawberry extract (optional)
  • 1-2 drops red food coloring (optional)
  • 2-3 tablespoons heavy whipping cream
  • ½ teaspoon vanilla extract


Instructions

  1. Preheat and prepare pan: Preheat oven to 350°F (175°C). Spray a 9×5-inch loaf pan with nonstick baking spray containing flour or grease and flour the pan to prevent sticking.
  2. Mash banana: Place the overripe banana in a large bowl and mash thoroughly using a fork or potato masher until smooth.
  3. Combine wet ingredients: Add the eggs, water, 1 teaspoon vanilla extract, and vegetable oil to the mashed banana. Stir until well blended.
  4. Add sugar and dry mix: Stir in the granulated sugar and pancake mix, gently combining until just mixed.
  5. Fold in strawberries: Carefully fold the chopped strawberries into the batter to evenly distribute without breaking them down.
  6. Bake the bread: Pour the batter into the prepared loaf pan and bake for 40 to 50 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with just a few crumbs. Let the bread cool in the pan for 15 to 20 minutes, then remove and cool completely on a wire rack before frosting.
  7. Prepare glaze: In a bowl, whisk together powdered sugar, ½ teaspoon vanilla extract, strawberry extract (if using), and 2 tablespoons heavy cream until smooth. Adjust consistency with additional cream if needed. Add red food coloring drops as desired.
  8. Glaze the bread: Once the bread is completely cooled, drizzle or spread the glaze over the top. The glaze will not fully set but will form a light crust.
