Ingredients
Bread Ingredients
- 1 medium overripe banana
- 2 large eggs
- ¼ cup (59ml) water
- 2 teaspoons vanilla extract (divided)
- ½ cup (119ml) vegetable oil
- ⅓ cup (67g) granulated sugar
- 2 cups (244g) Krusteaz Pancake Mix
- 1 cup (149g) chopped strawberries
Glaze Ingredients
- ¾ cup (86g) powdered sugar
- ⅛ teaspoon strawberry extract (optional)
- 1-2 drops red food coloring (optional)
- 2-3 tablespoons heavy whipping cream
- ½ teaspoon vanilla extract
Instructions
- Preheat and prepare pan: Preheat oven to 350°F (175°C). Spray a 9×5-inch loaf pan with nonstick baking spray containing flour or grease and flour the pan to prevent sticking.
- Mash banana: Place the overripe banana in a large bowl and mash thoroughly using a fork or potato masher until smooth.
- Combine wet ingredients: Add the eggs, water, 1 teaspoon vanilla extract, and vegetable oil to the mashed banana. Stir until well blended.
- Add sugar and dry mix: Stir in the granulated sugar and pancake mix, gently combining until just mixed.
- Fold in strawberries: Carefully fold the chopped strawberries into the batter to evenly distribute without breaking them down.
- Bake the bread: Pour the batter into the prepared loaf pan and bake for 40 to 50 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with just a few crumbs. Let the bread cool in the pan for 15 to 20 minutes, then remove and cool completely on a wire rack before frosting.
- Prepare glaze: In a bowl, whisk together powdered sugar, ½ teaspoon vanilla extract, strawberry extract (if using), and 2 tablespoons heavy cream until smooth. Adjust consistency with additional cream if needed. Add red food coloring drops as desired.
- Glaze the bread: Once the bread is completely cooled, drizzle or spread the glaze over the top. The glaze will not fully set but will form a light crust.
- Storage: Store the glazed bread covered at room temperature for up to 3 days. For longer storage, freeze the unfrosted bread for up to 3 months and glaze after thawing.
Notes
- Use a loaf pan size of 9×5 inches for best results.
- Overripe bananas add natural sweetness and moisture; do not substitute with underripe bananas.
- Fold strawberries gently to avoid turning the batter pink and watery.
- The glaze is optional but adds a delicious strawberry flavor and attractive finish.
- Freeze unfrosted bread to maintain texture and frost after thawing for best appearance.
- If you cannot find Krusteaz Pancake Mix, use your favorite pancake mix as a substitute.
- Adjust the amount of sugar or glaze to your taste preferences.
