Ingredients
Wet Ingredients
- 1 cup mashed ripe banana (about 3 medium)
- 2 eggs
- 3 cups milk (any type preferred)
- ¼ cup pure maple syrup
- 2 teaspoons vanilla extract
Dry Ingredients
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- ½ teaspoon salt
- 4 cups old-fashioned oats
Fruit
- 1 ½ cups chopped strawberries (plus more for serving)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to ensure the baked oatmeal does not stick.
- Mix Wet and Dry Ingredients: In a large bowl, whisk together the mashed banana, eggs, milk, maple syrup, vanilla extract, cinnamon, baking powder, and salt until well combined.
- Add Oats and Strawberries: Stir in the old-fashioned oats, followed by the chopped strawberries, mixing until all the ingredients are thoroughly combined.
- Bake the Oatmeal: Carefully pour the mixture into the greased baking dish, smoothing it out. Bake for 35 to 40 minutes, until the oatmeal is set and a toothpick inserted in the center comes out mostly clean.
- Cool and Serve: Allow the baked oatmeal to stand for 5 minutes after removing from the oven. Serve warm, topped with additional fresh strawberries if desired.
