Pomegranate Salmon
- 4 salmon filets
- Kosher salt and pepper, to taste
- 2 tablespoons unsalted butter
- 2 garlic cloves, minced
- ¼ cup maple syrup
- ¼ cup pomegranate molasses
- ¼ cup water
- 3 tablespoons pomegranate arils
- 1 tablespoon fresh herbs, like parsley or cilantro, chopped
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the vegetables and finishing the salmon.
- Prepare and Roast Vegetables: Spread the broccoli florets and halved Brussels sprouts on a baking sheet. Drizzle with olive oil and season generously with kosher salt and pepper.
