Description
Steamrolled Sweet Potatoes are a delicious and comforting side dish made by microwaving sweet potatoes for quick cooking, then gently smashing and pan-roasting them in butter and olive oil. Topped with fresh herbs, Gruyere cheese, and a drizzle of hot honey, this recipe offers crispy edges with a creamy interior and a perfect balance of savory and sweet flavors.
Ingredients
Main Ingredients
- 1 tablespoon unsalted butter
- 2 medium sweet potatoes
- Salt and pepper to taste
- 3 teaspoons olive oil, divided
- 2 teaspoons minced fresh rosemary
- 2 teaspoons minced fresh sage
- 1/4 cup finely grated Gruyere cheese
- Hot honey, for drizzling
Instructions
- Prep the sweet potatoes: Scrub the sweet potatoes clean and poke several holes in each with a fork. Place them on a microwave-safe plate and microwave for 4 to 6 minutes until easily pierced with a fork, flipping halfway through cooking.
- Slice and steamroll: Cut each sweet potato in half lengthwise. Use the back of a fork or spatula to gently smash each half to about 1/2-inch thickness. Season the flesh sides with salt and pepper.
- Roast the potatoes: Heat the butter and 2 teaspoons olive oil in a medium cast-iron skillet over medium-high heat. Add the sweet potatoes flesh side down and cook undisturbed for 4 minutes. While cooking, brush the skin sides with the remaining 1 teaspoon olive oil and season with salt and pepper. Flip the potatoes and cook for an additional 3 minutes. Sprinkle each half with minced sage and rosemary, then top with grated Gruyere cheese.
- Broil the potatoes: Transfer the cast-iron skillet to the oven and broil for 2 to 3 minutes until the edges become crispy and the cheese is bubbly and golden.
- Serve: Remove from the oven and drizzle each sweet potato half with hot honey. Serve immediately while warm and crispy.
Notes
- Scrubbing the sweet potatoes before microwaving ensures clean skin and better flavor.
- The gentle smashing or steamrolling helps create crispy edges and a creamy interior.
- Cast-iron skillet is recommended for even heat and a nice sear.
- Watch closely while broiling to prevent cheese from burning.
- Hot honey adds a lovely sweet and spicy contrast and can be adjusted to taste.
