Truffle Herb Fries
- 2 to 3 russet potatoes, thinly sliced
- Olive oil, for spritzing or brushing
- 1 teaspoon truffle salt
- 2 tablespoons chopped fresh parsley
- 2 tablespoons freshly grated parmesan cheese
Honey Dijon Aioli
- ⅓ cup mayonnaise
- 1 garlic clove, minced
- 1 tablespoon Dijon mustard
- 2 teaspoons honey
Instructions
- Prepare the Steak: Remove the steaks from the refrigerator and let them sit at room temperature for about 30 minutes to ensure even cooking.
- Heat the Skillet: Place a cast iron skillet over medium-high heat until hot and ready for cooking.
- Season and Sear: Season both sides of the steaks generously with kosher salt and freshly cracked black pepper. Add 2 tablespoons of unsalted butter to the hot skillet, allowing it to melt and sizzle before placing the steaks in the pan.
- Cook the Steaks: Sear the steaks for 3 minutes until a deep golden crust forms. Flip and cook for another 3 minutes. Add the remaining butter and spoon the melted butter over the steaks for an additional 1 to 2 minutes. Aim for an internal temperature of about 140-145°F for medium to medium-well doneness.
- Rest the Steaks: Remove the steaks from the skillet and let them rest for 10 to 15 minutes before slicing to allow the juices to redistribute.
- Prepare the Potatoes: Place the thinly sliced potatoes in a large bowl filled with cold water. Soak them for 30 to 60 minutes to remove excess starch, then drain and pat completely dry with kitchen towels.
- Air Fry the Fries: Preheat your air fryer to 375°F. Lightly coat the potatoes with olive oil using a brush or sprayer. Arrange the fries in a single layer inside the air fryer basket (cook in batches if necessary). Air fry for 12 minutes, then gently flip and cook for an additional 5 to 6 minutes until crispy and golden.
- Finish the Fries: In a small bowl, mix together chopped parsley and grated parmesan cheese. Once fries are cooked, transfer them to a plate or parchment paper, immediately sprinkle with truffle salt, then evenly coat with the parsley and parmesan mixture. Keep warm in a 200°F oven if needed.
- Make the Honey Dijon Aioli: Whisk together mayonnaise, minced garlic, Dijon mustard, and honey in a small bowl until smooth and well combined.
