  • 2 Tbsp. capers, chopped
  • 4 oz. filet mignon steak
  • 1 Tbsp. chopped flat-leaf parsley
  • 1 tsp. lemon zest
  • Sliced baguette, to serve


Instructions

  1. Prepare the dressing: In a medium bowl, whisk together the egg yolk, olive oil, sherry vinegar, salt, and black pepper until well combined. Mix in the dry mustard powder, chopped shallot, and chopped capers. Set this mixture aside to meld flavors.
  2. Trim the steak: Remove any excess fat from the filet mignon steak to ensure a clean, tender texture.
  3. Slice and chop the steak: Carefully slice the filet mignon as thinly as possible into wide strips. Then slice these strips into even thinner slices. Finally, finely chop these slices into very small pieces suitable for tartare.
  4. Combine steak and dressing: Gently fold the chopped steak into the egg yolk mixture, ensuring the meat is fully coated but avoid over-mixing to maintain texture.
  5. Shape the tartare: Place a 3½ inch diameter round cookie cutter on a serving plate. Fill it with the steak mixture, pressing gently to compact the meat evenly. Carefully remove the cookie cutter to keep the shape intact.
  6. Garnish and serve: Evenly sprinkle the top of the tartare with lemon zest and chopped flat-leaf parsley. Arrange slices of baguette around the meat and serve immediately.
