Description

Celebrate St. Patrick’s Day with this vibrant and festive St. Patrick’s Day Poke Cake. Made with a moist white cake base, infused with tangy lime gelatin, and topped with fluffy whipped topping, this dessert is quick to prepare and sure to bring a touch of green luck to your holiday spread.

Ingredients

Cake

  • Cooking spray, for greasing pan
  • 1 (15.25 oz.) box white cake mix (plus ingredients required on the box)

Gelatin

  • 1 (3 oz.) package lime gelatin (such as Jell-O)

Topping

  • 1 (8 oz.) package Cool Whip, thawed
  • Sprinkles or candies of your choice, for garnish

Instructions

  1. Prepare oven and baking pan: Preheat your oven to 350°F (175°C). Grease a 13- x 9-inch baking pan thoroughly with cooking spray to prevent sticking.
  2. Make cake: Prepare the white cake batter according to the instructions on the cake mix box. Pour the batter into the prepared pan. Bake in the preheated oven for 20 to 22 minutes, or until a wooden pick inserted into the center comes out clean. Once baked, let the cake cool in the pan on a wire rack for 15 minutes.
  3. Poke holes in cake: Using a fork, gently poke holes all over the surface of the slightly warm cake, ensuring they are evenly spaced to allow the gelatin to seep in.
  4. Make gelatin: Prepare the lime gelatin according to the package directions. Immediately after it is ready, carefully pour the gelatin evenly over the cake, allowing it to soak into the holes.
  5. Chill cake: Cover the cake loosely and place it in the refrigerator. Chill for 1 to 2 hours until the cake is fully cooled and the gelatin has set.
  6. Frost and decorate the cake: Spread the thawed Cool Whip evenly over the top of the chilled cake. Decorate with sprinkles or St. Patrick’s Day themed candies to add a festive and colorful touch.
  7. Store cake: Store the cake in an airtight container in the refrigerator. Consume within 3 days for optimal freshness. Avoid freezing as the texture and quality may be compromised.

Notes

  • You can customize this poke cake by using different gelatin flavors or colors for other occasions.
  • Make sure the cake is only slightly warm before pouring the gelatin to ensure proper absorption without melting the gelatin.
  • Use a toothpick if you prefer smaller holes to achieve a more delicate gelatin infusion.
  • This cake is best served chilled to enjoy the full flavor and texture contrast.
  • Keep the cake tightly covered while chilling to prevent it from absorbing refrigerator odors.
