Description

This Spring Vegetable Puff Pastry Tart is a delightful and visually appealing dish perfect for a light lunch or appetizer. Featuring a crisp puff pastry base topped with a creamy blend of cream cheese, Parmesan, fresh mint, and lemon zest, it’s adorned with fresh asparagus, cherry tomatoes, leek, and colorful bell peppers. The tart is baked until golden brown and optionally sprinkled with sesame seeds for a lovely nutty crunch.

Ingredients

Cheese Mixture

  • 100 grams full fat cream cheese
  • 40 grams grated Parmesan
  • 1/2 tsp fresh mint, chopped
  • 1 tsp lemon zest
  • Salt and pepper, to taste

Vegetables

  • 1 bunch asparagus
  • 4 whole cherry tomatoes
  • 1/4 leek
  • 1/4 yellow pepper
  • 1/4 red pepper

Pastry and Decorations

  • 1 pack premade puff pastry
  • Milk or oil, for brushing the edges
  • 20 grams sesame seeds (optional, for decoration)

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) or to the temperature instructed on your puff pastry packaging to ensure even baking.
  2. Prepare Cheese Mixture: In a small bowl, combine the cream cheese, grated Parmesan, chopped fresh mint, lemon zest, and season with salt and pepper. Mix thoroughly until smooth and well blended.
  3. Prepare Pastry Base: Unroll the puff pastry sheet onto a baking tray lined with parchment paper, creating a flat surface for your tart topping.
  4. Spread Cheese Mixture: Evenly spread the cheese mixture over the puff pastry, leaving a 5 cm border around the edges free to fold later into a frame.
  5. Create Pastry Frame: Fold up the edges of the pastry around the cheese mixture to form a raised border that holds the topping in place and resembles a photo frame.
  6. Slice Vegetables: Halve the cherry tomatoes and thinly slice the leek. Slice the yellow and red peppers into strips or bite-sized pieces as preferred.
  7. Arrange Vegetables: Artfully arrange the asparagus, cherry tomatoes, leek slices, and bell peppers over the cheese mixture to ensure each slice gets a colorful vegetable topping.
  8. Brush and Decorate: Lightly brush the folded pastry edges with a little milk or oil to promote browning. Sprinkle sesame seeds over the edges if using, adding a nutty crunch and attractive finish.
  9. Bake the Tart: Place the baking tray in the preheated oven and bake for approximately 20-25 minutes, or until the puff pastry is golden brown and cooked through.
  10. Serve: Allow the tart to cool slightly before slicing into 8 servings. Enjoy warm or at room temperature.

Notes

  • Ensure the puff pastry is fully thawed before use for easier handling and better puff.
  • Feel free to substitute the vegetables with seasonal spring vegetables like peas or radishes for variety.
  • For a vegan version, use non-dairy cream cheese and vegan puff pastry.
  • Sesame seeds are optional but add a lovely texture and flavor to the edges.
  • This tart is best enjoyed fresh but can be reheated gently in an oven or toaster oven to maintain crispiness.
