  • 2 Tbsp olive oil (for garlic butter)
  • 2 Tbsp butter, room temperature

Spices & Seasonings

  • 1/8 tsp salt (for mushrooms)
  • 1/8 tsp freshly cracked black pepper (for mushrooms)
  • 1/8 tsp salt (for garlic butter)
  • 1/2 tsp garlic powder
  • 1/8 tsp crushed red pepper
  • 1/8 tsp freshly cracked black pepper (for topping)

  • 1 cup shredded cheese (such as mozzarella or a blend)


Instructions

  1. Preheat and Sauté Mushrooms: Preheat your oven to 350ºF. Slice the mushrooms and add them to a skillet with 1 tablespoon olive oil, 1 clove minced garlic, 1/8 teaspoon salt, and 1/8 teaspoon freshly cracked black pepper. Sauté over medium heat until the mushrooms soften and all moisture evaporates.
  2. Add and Cook Spinach: Add the frozen spinach to the skillet with the mushrooms. Continue to sauté until the spinach is heated through and the moisture has mostly evaporated, ensuring no water pools in the skillet. Transfer the mixture to a bowl and let it cool slightly.
  3. Make Garlic Butter: In a small bowl, mix the room temperature butter, 2 tablespoons olive oil, 2 cloves minced garlic, garlic powder, and 1/8 teaspoon salt. Stir well until you have a soft and spreadable garlic butter.
  4. Prepare Bread Base: Slice the French bread loaf in half lengthwise, then slice each half into pieces. Place bread cut side up on a parchment-lined baking sheet. Spread the prepared garlic butter evenly over each piece.
  5. Combine Filling Ingredients: Add half of the shredded cheese, the remaining 1/8 teaspoon freshly cracked black pepper, and crushed red pepper to the bowl with the spinach and mushrooms. Stir the mixture to evenly combine all flavors.
  6. Assemble the Pizzas: Divide the spinach mushroom mixture evenly among the four pieces of bread, spreading it over the garlic butter layer. Top each piece with the remaining shredded cheese.
