Description

This Spinach Potato Casserole is a comforting, cheesy dish featuring tender potatoes combined with sautéed spinach, garlic, and a creamy sour cream mixture, all baked to golden perfection. Ideal as a hearty side or vegetarian main, it’s packed with flavor and simple to prepare.

Ingredients

Potatoes and Vegetables

  • 4 pounds potatoes, peeled and diced (2 kilos)
  • 1 onion, minced
  • 8 cups fresh spinach leaves
  • 4 garlic cloves, minced

Dressing and Seasonings

  • 7 ounces sour cream (200 grams)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper (or less)
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

Others

  • 2 tablespoons oil
  • 8 ounces cheddar cheese (240 grams), grated

Instructions

  1. Preheat the Oven: Start by preheating your oven to 400° Fahrenheit (200° Celsius) to ensure it’s ready for baking the casserole.
  2. Boil the Potatoes: Place the peeled and diced potatoes into a pot and cover with just enough water to submerge them. Add salt (approximately 2 teaspoons per 3 cups of water). Cover and bring to a boil, then reduce heat to low and simmer until the potatoes are nearly tender, avoiding overcooking.
  3. Sauté Onion and Spinach: While the potatoes cook, heat the oil in a large frying pan or skillet. Add the minced onion and sauté for about 4 minutes until translucent. Gradually add the fresh spinach leaves, cooking in batches if needed, until all are wilted. Stir in the minced garlic and cook until fragrant, then turn off the heat.
  4. Prepare the Cream Mixture: In a small bowl, mix together the sour cream, salt, black pepper, dried oregano, and garlic powder until smooth and well combined.
  5. Combine Ingredients: Drain the potatoes and combine them with the sautéed spinach mixture and the sour cream dressing, either in the pot or directly in an oven-proof dish to make layering easier.
  6. Assemble the Casserole: Pour the combined mixture into an oven-proof baking dish. Evenly sprinkle the grated cheddar cheese over the top to create a cheesy crust.
  7. Bake: Place the casserole in the preheated oven and bake at 400° Fahrenheit (200° Celsius) for about 25 minutes, or until the cheese on top is golden brown and the potatoes are tender.
  8. Serve and Enjoy: Remove from the oven and let it cool slightly before serving to enjoy a warm, creamy, and delicious spinach potato casserole.

Notes

  • Use any neutral oil like vegetable or canola oil for sautéing.
  • You can substitute fresh spinach with frozen spinach, but ensure it’s well drained to avoid excess moisture.
  • Adjust salt and pepper according to preference.
  • For a lighter version, use low-fat sour cream and cheese.
  • An oven-proof dish around 9×13 inches is ideal for baking this casserole evenly.
  • This casserole can be prepared ahead and baked when ready to serve.
