Description

Ingredients

Onion Mixture

  • 2 tbsp salted butter
  • 1 sweet onion, diced
  • 1/2 tsp salt

Spinach Filling

  • 8 oz cream cheese, softened
  • 8 oz frozen spinach
  • 1 tsp garlic powder

Puff Pastry & Topping

  • 2 sheets puff pastry
  • 1 cup shredded cheese (mozzarella, Colby jack, or cheddar)
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat Oven: Preheat your oven to 425°F to get it ready for baking the pinwheels.
  2. Caramelize Onions: Melt butter in a skillet over medium heat. Add diced onions with salt and cook, stirring occasionally until onions are softened and golden brown, about several minutes. Set aside to cool.
  3. Prepare Spinach: Thaw the frozen spinach by submerging it in warm water until thawed. Drain thoroughly and pat dry with paper towels to remove as much moisture as possible.
  4. Mix Filling: In a large bowl, combine softened cream cheese, drained spinach, caramelized onions, and garlic powder. Mix until fully blended.
  5. Assemble Pinwheels: Roll out one puff pastry sheet and evenly spread half of the cream cheese and spinach mixture across the entire sheet, making sure to cover up to the edges. Sprinkle half of the shredded cheese on top of the mixture.
  6. Roll and Seal: Starting from the bottom edge, tightly roll the puff pastry sheet into a tube. Press down along the seams to seal the roll.
  7. Slice Pinwheels: Using a serrated knife, slice the rolled tube into 12 equal pieces (pinwheels).
  8. Prepare for Baking: Place pinwheels on a parchment paper-lined or greased baking sheet, spacing them at least 2 inches apart. Brush the tops of each pinwheel with beaten egg for a golden finish.
  9. Repeat Assembly: Repeat the spreading, rolling, slicing, and placing steps with the second puff pastry sheet and remaining filling and cheese.
