A quick and flavorful recipe for spicy roasted chickpea wraps, perfect for a healthy and satisfying meal. The chickpeas are seasoned with smoked paprika, hot chili powder, and cumin, then roasted until crisp and served in soft wraps with fresh salad leaves, cherry tomatoes, cucumber, and garlic mayonnaise.
Ingredients
Chickpea Mixture
- 400 g tin chickpeas, thoroughly drained (240g, or ~1 1/4 cups, when drained)
- 1 tbsp oil
- 2 tsp smoked paprika
- 1 tsp hot chilli powder
- 1/2 tsp cumin
- Salt, to taste
- Black pepper, to taste
Wraps and Fillings
- 2 wraps or flour tortillas
- 1 tbsp garlic mayonnaise (use vegan mayo if needed)
- Small handful salad leaves
- ~6 cherry tomatoes, halved
- ~2 inch piece cucumber, cut into small chunks
Instructions
- Prepare the Chickpeas: Add the drained chickpeas to a mixing bowl along with the oil, smoked paprika, hot chilli powder, cumin, salt, and black pepper. Mix thoroughly to coat the chickpeas evenly with the spices.
- Roast the Chickpeas: Spread the seasoned chickpeas out in a single layer on a baking tray. Roast them in a preheated oven at 190°C (Gas Mark 5 / 375°F) for around 25 minutes, or until they are crisped to your liking, stirring halfway if desired for even cooking.
- Prepare the Wraps: While the chickpeas are roasting, lay the wraps out on a board. Spread a smear of garlic mayonnaise evenly on each wrap. Arrange the salad leaves, halved cherry tomatoes, and cucumber chunks on top of the mayonnaise.
- Assemble the Wraps: Once the chickpeas are crispy and out of the oven, spoon them evenly over the salad in the wraps. Serve the wraps warm. You can eat them flat with a knife and fork or roll them tightly for a handheld wrap.
Notes
- For a vegan option, substitute garlic mayonnaise with vegan garlic mayo.
- You can adjust the level of spice by moderating the amount of hot chilli powder.
